 Sure, also known as "Ashure" in English, is a traditional Turkish dessert made by mixing various ingredients. It's usually cooked and shared on the 10th day of the Islamic month of Muharram. Here's a basic aşure recipe:



Ingredients:


- 1 cup aşure wheat

- ½ cup chickpeas (precooked)

- ½ cup kidney beans (precooked)

- ½ cup green lentils (precooked)

- 1 cup raisins

- ½ cup dried apricots (chopped)

- ½ cup dried figs (chopped)

- ½ cup dried grapes (raisins)

- 2 liters water

- 2 cups milk

- 2 cups sugar

- 1 teaspoon cinnamon

- ½ cup cornstarch

- ½ cup water (for cornstarch)

- ½ cup chopped walnuts or hazelnuts

- A pinch of salt


Instructions:


1. Rinse the aşure wheat and drain it. In a large pot, add 2 cups of water and bring it to a boil. Add the drained wheat and cook until it softens.


2. Add the precooked chickpeas, kidney beans, and green lentils to the pot. Continue to simmer.


3. Rinse the raisins in water, then drain them. Add them to the mixture.


4. Add the chopped dried apricots, figs, and dried grapes (raisins) to the pot. Mix well.


5. Pour in the remaining 6 cups of water and continue to simmer.


6. Add the milk to the mixture and stir. Then add the sugar and keep stirring while it simmers.


7. Mix in the cinnamon.


8. Dissolve the cornstarch in ½ cup of water. Slowly pour the cornstarch mixture into the pot while stirring continuously. Cook until the mixture thickens.


9. Add a pinch of salt and stir.


10. Once the aşure has finished cooking, remove it from the heat and let it cool down.


11. After it has cooled, garnish the aşure with chopped walnuts or hazelnuts.


12. Serve the aşure in individual bowls or dishes.
